Scorched Peanut Cookies Recipe

Ingredients:

125g butter

1/4 cup crunchy peanut butter

3/4 cup brown sugar (firmly packed)

1 egg

1.5 cups plain flour

1/2 teaspoon bicarbonate of soda

3/4 cup scorches peanuts

Method:

Beat butter, peanut butter, sugar and egg in a small bowl until well combined. Transfer mixture to a large bowl. Stir in sifted dry ingredients and nuts. Roll 2 level teaspoons of mixture into a ball with lightly floured hands. Place onto greased oven tray, flatten slightly with fork. Repeat with remaining mixture, allowing about 3cm between cookies. bake in moderately hot oven for about 12 minutes or until lightly browned. Cool on wire rack.
