          Spiced Rum Cookies Recipe

          Ingredients: | 
         
        
          | 
           
          170g unsalted butter 
          160g brown sugar, firmly packed 
          220g plain flour 
          pinch of salt 
          1/2 tsp bicarbonate of soda 
          1 tsp ground cinnamon 
          1/4 tsp ground coriander 
          1/2 tsp ground nutmeg 
          1/4 tsp ground cloves 
          2 tbsp dark rum  |

          Method: 
          
            - 
          
          Whisk the butter and sugar until light 
          and fluffy. 
             
            - 
          
          Sieve the flour, salt, bicarbonate of 
          soda, cinnamon, coriander, nutmeg and cloves into the creamed mixture. 
             
            - 
          
          Stir in the dark rum. 
             
            - 
          
          Using a teaspoon, put small amounts of 
          the mixture on to the baking trays. Placing them 7 cm apart . Flatten 
          each one slightly with the back of a spoon. 
             
            - 
          
          Bake in a preheated oven for 12 minutes 
          or until lightly brown. 
             
            - 
          
          Leave the cookies to cool on wire racks.
