Birthday Cake With Mixed Fruits Recipe

Ingredients:

Birthday Cake:

6 eggs

90g sugar

2 drops banana essence

110g self raising flour (sifted)

50ml corn oil (heated)

a little whipped cream

some kiwi fruits, peaches and grapes

15g instant jelly

300ml water

30g sugar

Line Cake:

100g margarine

100g icing sugar

100g plain flour (sifted)

125g egg whites

1 teaspoon chocolate essence

Baking Tin:

two 25cm round baking tins (greased and lined)

Method:

  1. Separate egg yolks from egg whites.

  2. Beat egg whites and sugar in mixer for 2 minutes till fluffy. Add egg yolks and beat till mixture is milky-yellow. Stir in banana essence. Remove from mixer.

  3. Add self raising flour and slowly mix well by hand. Add corn oil and mix well again.

  4. Pour cake mixture into baking tin. bake at 200 degrees Celsius for about 12 minutes. Remove and cool. Spread whipped cream over cake and top with fruits.

  5. Bring instant jelly, water and sugar to boil. Evenly pour liquid jelly onto cake. Wrap edges of birthday cake with Line Cake.

  6. Line Cake: Beat margarine and icing well. Add egg whites and mix well. Fold in flour and chocolate essence to mix well. Pour into piping bag. Pipe lines on 3 12"X15" baking trays greased and lined with greaseproof paper. Freeze for 30 minutes.

  7. Spread sponge cake mixture over it. (refer sponge cake) Bake for 8 to 10 minutes. Invert onto tray. Remove greaseproof paper. Cool Line Cake and cut into different shapes as desired.
