Rice Cup Cake Recipe

Ingredients:

Dough:

1.5 cups dry rice flour

1/4 cup tapioca flour

1/4 tsp salt

4 cups cold water

 

Filling:

1 cup dried vegetables (minced finely)

1 clove garlic (minced finely)

3 tbsp oil

Method:

Mix the rice flour, tapioca flour, salt and water together. Half-fill a pan with water, place a steaming tray or a rack over the water and place small earthen cups on this. Bring the water to the boil. Fill the cups with the rice mixture. (Stir the rice mixture every now and then to mix the ingredients well) Steam for 10 minutes. Heat the oil in a pan and fry the garlic till fragrant, then add the dried vegetables and simmer in oil for a few minutes till fragrant. When the cakes are cooked, remove from the cups by running a knife around the sides. Lift on to a platter and put a little filling in each. Served hot. You may eat with chili sauce.
