Crispy Duck Recipe

Ingredients: Servers 6

1 duck

2 tbsp soy sauce

2 cloves star anise

1 tsp salt

1 tbsp brown sugar

2 tsp five spice powder

1 tbsp salted black beans

1 tbsp cooking wine

1 tbsp cornstarch

1 tbsp plain flour

oil for deep-frying

Method:

Place the duck in a large saucepan and add 4 cups of water, soy sauce, star anise, salt and brown sugar. Boil and simmer till tender. Drain the duck well. Mix the five spice powder with the beans and wine. Place 1 tsp of the mixture inside the duck and rub the rest over the outside. Sift the flours together and pat on the outside of the duck. Deep fry the duck in hot oil until golden and crispy. Drain well on kitchen paper. Chop the duck into bite sizes and serve.
