Duck In Spiced Coconut Sauce Recipe

Ingredients:

1 whole duck (4 lb)

8 tbsp groundnut oil

salt to taste

2 large onions (chopped)

2 garlic cloves (finely chopped)

1 tbsp Java curry powder

4 tsp chili paste

3 tsp ginger root (ground)

1 tsp soft brown sugar

5 oz desiccated coconut

6 large onions (sliced into thin rings)

2.5 cups thick coconut milk

2.5 cups thin coconut milk

1 tbsp lemon juice

Method:

Dry the duck inside and outside with kitchen paper. Rub the inside of the duck with salt. Brush the duck skin with oil. Roast the duck for up to 30 minutes until evenly browned. Turn regularly and brush with oil once or twice during roasting. Allow the duck to cool before cutting into smaller equal pieces. Stir fry the onion in 2 tbsp oil until light brown. Add in garlic and stir. Add the curry powder, chili paste, ginger, salt and sugar. Stir well and remove from. Let the mixture cool. Brush the duck on all sides with the mixture. Put the coconut in a bowl and add in 5 tbsp of boiling water and stir. Heat up the remaining oil in a pan and stir fry the onion rings until transparent. Pour in the thin coconut milk. Add the coconut and stir vigorously. Put the pieces of duck into the sauce and simmer until the sauce is thick. Stir occasionally. Pour in the thick coconut milk and the lemon juice. Bring to the boil and add salt to taste. Dish out to a serving dish and serve.
