Eggs In Chili Bean Paste Sauce Recipe

Ingredients:

4 dessertspoons of cooking oil

5 hard boiled eggs

4 pips garlic (sliced)

6 shallots (sliced)

1 dessertspoon chili paste

20 medium size shrimps (shelled, seasoned with salt and pepper)

4 green chilies (sliced into halves)

20 chili paddy (bird's eye chilies)

3 cm galangal sliced into strips

2 tbsp soy bean paste

1 tomato cut into wedges

1.5 dessertspoon thick soy sauce mix with 4 tbsp water

3 tbsp warm water

gourmet powder to taste

Method:

Heat up oil in pan and put in the hard boiled eggs. Fry them till golden brown. Dish out onto a plate and leave aside. To make the gravy, fry the garlic and shallots till golden brown. Add in chili paste and stir for 10 minutes. Then add in prawns, green chilies, chili paddy, galangal, soy bean paste and tomato. Stir constantly for 10 to15 minutes. Then put in thick soy sauce and warm water. Simmer for 5 minutes. Add gourmet powder. Dish grave onto eggs and garnish with sliced onions and fresh chilies. Serve.
