Fried Yam Duck With Gravy Recipe

Ingredients:

1 whole duck (about 1.5 kg)

300g yam

2 bowls water

1 piece ginger (about 5 cm length, sliced)

oil for deep frying

Seasoning Ingredients:

1 tsp sesame oil

1 tsp salt

1 tsp sugar

1 tsp pepper

1 tbsp corn flour

1 egg (beaten)

1 tbsp light soy sauce

Gravy Ingredients:

10 button mushrooms (cut into halves)

1 carrot (sliced)

1 cup green peas

1.5 bowls duck stock

for gravy seasoning:

1/2 tsp salt

1/2 tsp sugar

1/4 tsp pepper

1 tsp sesame oil

1 tbsp soy sauce

1 tsp corn flour

Method:

Steam duck with 2 bowls of water with ginger slices for 2 hours. Remove all the bones and chop meat until fine. Steam the yam, then peel and mash. Mix the mashed yam, duck meat with seasoning ingredients thoroughly. Then divide the mixture into 6 to 8 portions. Press each portion into a flat piece. Rub some flour on both sides and deep fry for about 5 minutes. Drain well and arrange on a plate. Remove oil from the pan leaving only about 2 tbsp. Fry carrots and mushrooms until cooked. Add peas and gravy seasoning and fry well. Add stock and bring to the boil. Dish up and pour gravy over duck pieces.
