Plum Sauce Chicken Recipe

Ingredients:

1 whole chicken (about 2 lbs, cut into half)

1 Tbsp Chinese rice wine

salt to taste

pepper to taste

2 tsp mustard powder

oil for deep frying

Ingredients For Plum Sauce:

3 tbsp of plum sauce

1 tbsp oyster sauce

1 cube chicken essence

1.5 cups of water

1.5 tsp Chinese rice wine

1.5 tsp sugar

1.5 tsp chopped onions

1 tbsp oil for frying

Method:

Marinate the chicken with Chinese rice wine, mustard powder, salt and pepper. Out aside for over 30 minutes. Heat up oil in pan. Put in two halves of the chicken and fry for 25 minutes. Keep turning the chicken while frying. When done, dish out and cut into bite pieces. Put aside on a dish. To prepare the plum sauce, heat up wok and fry the chopped onions. Mix in all the ingredients and bring to boil. When sauce thickens, remove from heat and pour over the fried chicken. Serve.
