Yam Duck Recipe

Ingredients:

oil for cooking

2 kg duck cut into 9 pieces

1 kg yam cut into 12 pieces

3 tbsp bean curd paste

5 pips garlic

10 small onions (sliced)

1 piece fermented bean curd

1 tsp oyster sauce

1/2 size large ginger

1 piece (3 cm) cinnamon bark

2 pieces star anise

1/2 tsp pepper corn

3/4 cup boiled water

Method:

Grind bean curd paste, garlic, onions and fermented bean curd together. Heat cooking oil and fry them until fragrant. Add in duck oyster sauce, ginger slices and stir fry for 10 minutes. Put in star anise, cinnamon bark and pepper corn. Add enough boiled water and let it simmer for 1/2 hour. Add in yam pieces and simmer until the duck and yam becomes tender. Garnish and serve.
