Fried Fish In Coconut Sauce Recipe

Ingredients:

5 small mackerel fillets or red mullet

3 tbsp lemon juice

1/2 tsp salt

1 cup groundnut oil

2 large onions (chopped)

2 garlic cloves (finely chopped)

1 tbsp fresh ginger root (grated finely)

2 tsp chili paste

1 tsp soft brown sugar

2 tbsp Indonesian salty soy sauce (light soy sauce)

1 cup thin coconut milk

5 tbsp thick coconut milk

1 red chili (seeded)

Method:

Rinse the fish and dry with kitchen paper. Mix the salt with lemon juice and stir until the salt dissolves. Coat the fish with the mixture and leave to stand for 30 minutes. Heat 2 tbsp of oil in pan and fry the onions until fragrant. Stir in the garlic and ginger root. Add the chili paste, sugar, soy sauce and thin coconut milk. Bring to boil while stirring. Lower the heat and simmer for 5 minutes. Heat up the remaining in a second pan. Dry the fillets again with kitchen paper. Fry the fillets until golden brown. Drain on kitchen paper the place on serving dish. Add the coconut milk to the hot sauce and bring to boil. Add salt to taste and pour the sauce over the fish. Serve immediately.
