Thai Grilled Fish With Lemon Sauce Recipe

Ingredients:

12 garlic cloves (crushed)

7 coriander roots

2 tbsp brandy

1 tbsp white peppercorns (crushed)

2 tsp thin soy sauce

2 small whole sea bass or perch (cleaned and gutted)

1 tsp salt

aluminum foil for wrapping

butter for greasing

Sauce Ingredients:

1/2 cup lemon juice

2 tbsp fish sauce

2 tbsp sliced shallots

1 tbsp palm sugar

1 tsp fresh small green chilies (finely sliced)

1 tsp coriander leaves and stem (chopped finely)

Method:

Mix the garlic, coriander root, white peppercorns, soy sauce and brandy together and pound with a mortar and pestle or use a blender. Rub the fish with salt and then with the pounded ingredients. Grease the aluminum foils with butter and 1 tsp water and use it to wrap the fish individually. Roast in a 350 degrees Fahrenheit oven or grill using medium heat for 15 to 20 minutes, turning over once. Meanwhile mix all the ingredients for the sauce together. When the fish are cooked, remove the wrappings and serve with the sauce.
