Clams Miso Soup Recipe


280g clams (shijimi)

3 cups dashi stock (refer How To Prepare Dashi Stock)

3.5 tbsp aka/shiro miso (Japanese soybean paste)



Soak clams in salted water for 20 minutes. Wash and clean. Heat dashi stock to a boil. Add clams and cook until the clams open. Dish out the clams and put in a serving bowl. Mix miso with some dashi stock to make a paste. Add to dashi stock and stir well. Turn off the heat and pour over the clams.
