Stuffed Squid Soup Recipe

Ingredients:

400g minced pork (ground)

1/2 tsp light soy sauce

1/2 ground white pepper

350g squid body cleaned

5 cups chicken stock

1 tbsp preserved cabbage (chopped)

8 white peppercorns (crushed)

1 tsp fish sauce

1/2 tsp sugar

3 spring onions Cut into 1/2 inch pieces

2 tbsp coriander leaves and stems cut into 1/2 inch pieces

Method:

Mix the pork, soy sauce and white pepper together. Use this to stuff the squids. Any extra pork mixture, use it to form meatballs. Heat up the chicken stock in a pan. Put in the preserved cabbage, crushed peppercorns and garlic. Bring to a boil. Put in the stuffed squids and the meatballs, if any into the boiled stock. Add in fish sauce and sugar. Boil until the stuffed is cooked (about 20 minutes). Add spring onions and coriander and remove from heat immediately. Serve.
