Tom Yam Mushroom Soup Recipe

Ingredients:

8 straw mushrooms, cut in half

4 oyster mushrooms, cut into bite-size pieces

3 shiitake mushrooms (soften in warm water and seasoned with soy sauce and sugar)

1 Chinese celery, cut into 4cm lengths

4 chilies, sliced in half lengthwise

3 slices galangal

2 lemon grass, cut into 4cm lengths

3 kaffir leaves

1/2 tsp sugar

2 tbsp soy sauce

2 tbsp lime juice

1.5 cups water

 

Method:

Boil the water in a pot. Put in galangal, lemon grass, kaffir leaves and chilies. After 15 minutes, add the three kinds of mushrooms. Simmer for a while, put in sugar and soy sauce. Add the celery and turn off the heat. Put in lime juice. Serve hot.
