If you make sauce, freeze it into ice cubs to use later on. All you need to do next time you want to use it, is reheat in a saucepan. Nothing to worry about as the sauce will be fine even after it’s been sitting in ice cube trays.

Winter greens make a great season vegetable. When bitten by the season’s frost, many vegetables like broccoli, collard greens and kale can be infused with sweetness. When purchasing these vegetables, look for ones that are colored a deep, bright green. If they appear to be limp or show signs of yellowing, look for something fresher. Take your time to throughly wash the greens, because they can hold quite a bit of dirt. You can submerge the greens into a bowl filled with cool water, next shake them off and continue rinsing until the water is clear.

Do not use wine for cooking that you have not tasted. Using cheap or unfamiliar wine puts the flavor of your food in danger. When in doubt, use a wine designed for cooking.

It can be very useful to think large when making your favorite chicken stock. Make sure that you prepare a large amount of stock so that you will have more than enough to store and use for future kitchen adventures. You can use the stock as a base for all kinds of soups or even casseroles. Make certain the stock is cooled, and then you can portion it into heavyweight Ziploc freezer bags and place in the freezer.
