When you are baking pastry crusts, try increasing the cooking time a bit. Your crust should be a deep caramel as opposed to a light goldenrod. This deeper color is evidence that the sugar has caramelized in the crust for added sweetness.

Always have your spices stored in a dark and cool place. Exposing spices to heat, humidity, and light will shorten their lifespan. Storing your spices in a dark location with a lower temperature will help preserve them longer. You’ll taste the difference in your dishes.

Do you feel you are being wasteful by discarding molded fruit? Could you instead just cut off the mold and eat the rest like you can with cheese? It’s a shame, but partially rotten fruit can’t be saved without being unhealthy. Immediately dispose of any fruits with a little rot because this can cause mold to grow deep into the fruits that can’t be seen by the human eye. This mold can cause you to become extremely sick.

Garlic, like lots of other foods, has the unfortunate characteristics of absorbing into your hands. Rub your hands on the inside of a sink made of stainless steel after using garlic. Not only will this remove the scent from your skin, but it will also prevent the juices from affecting the flavor of the next food you touch.

Make a lot of stock if you are going to make it ahead of time. Instead of making just what you need, make a huge pot so you have some to freeze and use later. There’s nothing better than homemade chicken stock as a flavorful base for casseroles, stews and soups. After the liquid has cooled you can store it in heavy-duty freezer bags.

Fresh Garlic

If you are cooking with garlic, you want to use the freshest clove that you can find. Fresh garlic has a sweeter taste. Fresh garlic is not soft and shriveled nor does it have bruises.

When serving salad to guests, you should never put salad dressing directly on it. You should have it to the side so that each person can use as much or as little as they want. This will allow your guests to control how much dressing they want to put on their salad. Offering a variety of dressing for their salad is the best way to make sure that all guests are happy.
