Almond Coffee Biscuits Recipe


120 g self raising powder

160 g ground almond

120 g margarine

150 g caster sugar

2 egg yolks

1 teaspoon vanilla essence

8 teaspoons coffee powder mixed with 2 teaspoon hot water

3/4 cup cereal

2 tablespoons almond flakes


Preheat oven to 150 degrees Celsius. Lightly greased baking sheets. Blend well almonds and flour. Set aside. Beat margarine and sugar until creamy. Beat in egg yolks, then stir in essence and dissolved coffee powder. Stir in almond mixture to form a soft a soft dough. Shape dough into marble sized balls. Roll the balls over the cereal to coat well. Lightly flatten balls and arrange on baking sheet. Decorate with almonds flakes. Bake for 25 to 30 minutes until biscuits are light brown. Allow biscuits to cool and store in airtight containers.
