Coconut Peanut Cookies Recipe


180 g margarine

250 g plain flour

1.5 tsp baking powder

Pinch of nutmeg, cinnamon powder and salt

120 g brown sugar

120 g castor sugar

2 eggs beaten

1/2 coconut (skinned, grated and roasted)

60 g peanut butter



2 eggs beaten


Sift the plain flour and baking powder together. Blend all the ingredients together in a mixing bowl until sufficiently firm before making it into a roll. Wrap it in tin foil and chill for two hours. Roll out a small quantity of dough (about 1/2 cm thick). Cut out fanciful shapes with a pastry cutter. Glaze with beaten eggs. Repeat the process of rolling, cutting and glazing until all the dough is used up. Place cut pastry on greased and lined baking trays. Baked in a preheated oven at 150 degrees Celsius until golden brown. Cool well before storing.
