Crunchy Peanut Cookies Recipe


130 g margarine

1/4 cup crunchy peanut butter

3/4 cup brown sugar

1.5 cups plain flour

1/2 teaspoon bicarbonate of soda

3/4 cup scorched peanuts

1 egg


Beat margarine, peanut butter, sugar and egg in a small bowl until well mixed. Transfer mixture to a large bowl and stir in sifted dry ingredients and nuts. Roll 2 level teaspoons of mixture into a ball with lightly floured hands. Flatten slightly with fork. Place onto greased oven tray. Repeat with remaining mixture, allowing about 1.5 inches between cookies. Bake in moderately hot oven for about 15 minutes or until lightly browned. Cool on wire rack.
