Lemon Chocolate Biscuits Recipe


175g butter, softened

280g caster sugar

1 egg, beaten

340g plain flour

25g dark chocolate, melted and cooled slightly

grated rind of 1 lemon


  • Cream the butter and sugar until light and fluffy.

  • Gradually add the beaten egg into the mixture. Beat well.

  • Sieve the flour into the creamed mixture. Mix thoroughly to form a soft dough.

  • Transfer half of the dough to another bowl and then beat in the cooled melted chocolate.

  • Stir the grated lemon rinds into the other half of the plain dough.

  • On a lightly floured surface, roll out the 2 pieces of dough to form rectangles of the same size.

  • Lay the lemon dough on top of the chocolate dough. Roll up the dough tightly into a sausage shape, using a sheet of baking paper to guide you. Leave the dough to chill in the refrigerator until firm enough to slice.

  • Cut the roll into slices about 1cm thick. Bake in a preheated oven for 12 minutes or until lightly brown,

  • Leave it to cool on a wire rack.
