Nut Cornflakes Cookies Recipe


1 cup cornflakes (crushed)

1/2 cup cereal

50 g self raising flour

1/4 cup roasted peanut halves

60 g butter

80 g fine sugar

1/4 teaspoon vanilla essence

1 egg well beaten

red glace cherries cut into pieces


Combine cornflakes, cereal, flour and nuts. Cream together butter, sugar and essence until light and fluffy. Beat in egg until well mixed. Blend in cornflakes mixture. Drop dough by teaspoonfuls onto lightly greased baking sheets, allowing room for spreading. Decorate with cherries. Bake in a preheated moderate oven at 180 degrees Celsius for 15 minutes or until lightly browned.
