Orange Ginger Nuts Cookies Recipe


340g self raising flour

pinch of salt

180g caster sugar

1 tbsp ground ginger

1 tsp bicarbonate of soda

125g butter

70g golden syrup

1 egg, beaten

1 tsp grated orange rind


  • Sieve the flour, sugar, salt, ginger and bicarbonate of soda into a mixing bowl.

  • Heat the butter and golden syrup together in a saucepan over a very low heat until the butter has melted.

  • Leave the butter mixture to cool slightly then pour it on to the dry ingredients.

  • Add the egg and orange rind and mix together thoroughly.

  • Sharp the dough into 30 even sized balls.

  • Place the balls well apart on the grease baking trays, then flatten them slightly with your fingers.

  • Bake in a preheated oven for 15 minutes or until the cookies lightly brown.

  • Transfer them to a wire rack to cool.
