Peanut Butter Cornflakes Cookies Recipe


120 g self raising powder

2/3 cups finely pounded cornflakes

1/2 cup roasted ground peanuts

150 g peanut butter

1/2 cup caster sugar

2 egg yolks

1 teaspoon vanilla essence

8-9 tablespoon or 1/2 cup plain milk

1 egg beaten

1/2 cup roasted peanut chips


Preheat oven to 150 degrees Celsius. Lightly grease baking sheets. Mix flour, cornflakes and ground peanuts in a bowl and blend well. Set aside. Blend peanut butter, sugar, eggs yolks and essence. Add flour mixture a little at a time, alternating with milk to form a soft dough. On floured board roll out dough to 1 cm thickness. Cut into desired shapes. Lightly brushed top with beaten egg and decorate with peanut chips. Arrange cookies on baking sheets. Bake for about 15 minutes or until light brown. Allow to cool before storing in airtight containers.
