Raisins Cookies Recipe


100 g butter

1 egg well beaten

2 cups cornflakes (crushed)

1/2 cup sifted self raising flour

1/2 cup desiccated coconut

1/2 cup chopped raisins

1/4 cup caster sugar

1/4 teaspoon salt

1.5 teaspoons grated lemon rind


In a bowl put in self raising flour, coconut, raisins, caster sugar, salt and lemon rind. Mix well. Add in melted butter and egg and mix well. Drop small balls of dough into crushed cornflakes, rolling lightly to coat dough well with cornflakes. Flatten dough slightly. Place on lightly greased baking sheets allowing room for spreading. Bake in a preheated moderate oven of 180 degrees Celsius for 12 to 15 minutes or until golden brown.
