Strawberry Jam Cookies Recipe


150 g margarine

250 g plain flour

45 g desiccated coconut

90 g castor sugar

1 egg

1/2 teaspoon vanilla essence

For Topping:

strawberry jam

a few strips of angelica

granulated sugar


  • Rub margarine into the flour until it resembles breadcrumbs.

  • Add in desiccated coconut, sugar, egg and vanilla essence to form a dough.

  • Mould dough into small round shapes and flatten slightly.

  • Brush with water and sprinkle with granulated sugar.

  • Make a small depression on the centre of every cookie with your finger and pipe in some strawberry jam.

  • Place a piece of angelica onto the cookies and bake them at 190 degrees Celsius (375 degrees Fahrenheit) for about 15 minutes.

  • Cool well before storing in an airtight container.
