Sugared Lemon Cookies Recipe


100g butter, softened

110g caster sugar

grated rind of 1 lemon

1 egg, beaten

4 tbsp lemon juice

330g plain flour

1 tsp baking powder

1 tbsp milk

icing sugar for dusting


  • Cream together the butter, sugar and lemon rind until pale and fluffy.

  • Add the beaten egg and lemon juice a little at a time. Beat well.

  • Sieve the flour and baking powder into the mixture and blend together. Add the milk to form a dough.

  • Turn the dough out on to a lightly floured surface. Divide the dough into 50 even sized pieces.

  • Roll each piece into a sausage shape with hands. Form any sharp you like.

  • Place on the grease baking trays and bake in a preheated oven for 15 minutes or lightly brown.

  • Leave to cool on a wire rack. Dust with icing sugar before serve.
