Sweet Cream And Jam Cookies Recipe


180 g butter

120 g caster sugar

1 egg

1 tsp vanilla essence

240 g flour

1 tsp baking powder

60 g desiccated coconut


Cream Filling:

60 g butter

120 g icing sugar

1/2 tsp vanilla essence

1 tbsp milk

strawberry jam


Sieve flour and baking powder together. Cream butter and caster sugar until light and fluffy. Add in eggs and vanilla essence. Blend well. Add desiccated coconut. Fold in sifted flour. Stir gently until mixture is evenly mixed. Put mixture into piping bag and pipe out desired shapes onto lined and greased baking tray. Bake in 180 degrees Celsius preheated oven for about 10 to 15 minutes or until golden brown in color. Allow it to cool.


Cream butter with icing sugar until light until fluffy. Add vanilla essence and milk. Spread a layer of cream on one biscuit and strawberry jam on the other. Sandwich and serve immediately.
