Apple Poppy Cake Recipe


1 1/4 cups sifted plain flour

1/2 teaspoon baking powder

Pinch of salt

150g margarine or butter

1/2 cup castor sugar

2 eggs

1/2 teaspoon vanilla essence

1/3 cup chopped dried apple

3 cups Apple Pops

1/2 cup chopped raisins



Grease and line a 18cm square pan. Preheat oven to 180 degrees Celsius. Sift together plain flour, baking powder and salt. Cream margarine and sugar until light and creamy. Add eggs, one at the time, beating well after each addition. Beat in essence. Fold in flour. Reserve 1/3 of mixture. Blend in chopped apple in the remaining mixture, then spread into prepared pan. Blend Apple Pops and chopped raisins in the reserved mixture. Spread evenly onto of cake mixture. Bake for 35 minutes or until cake tester inserted at the centre comes out clean. Cool cake, then cut into desired slices.
