Apple Walnut Cake Recipe


250 g margarine

250 g caster sugar

250 g plain flour (sifted)

6 eggs beaten

1 teaspoon baking powder

6 tablespoons water

3 tablespoons evaporated milk

1/2 lemon, juiced and grated rind

50 g walnuts (chopped)

vanilla essence

dash of mace

pinch of salt

2 green cooking apples (grated)

Oblong cake tin, greased and lined


Cream margarine and sugar till light. Add in eggs one at a time, beating for one minute each time. Fold in all the other ingredients, leaving the apples last. Bake in a preheated oven at 150 degrees Celsius in the tin until firm and browned.
