Bandy Ginger Loaf Recipe


250g butter

160g soft brown sugar

225g plain flour

1/2 tsp baking powder

Dash of salt and nutmeg powder

4 gees

1 tbsp treacle

4 tbsp evaporated milk

2 tsp finely-grounded young fresh ginger

75g ginger ale

2 tbsp brandy

1 tsp vanilla essence

4 tbsp golden syrup

50g toasted almond flakes



Sift together plain flour, baking powder, salt and nutmeg powder. Cream butter and sugar till fluffy, add eggs one at a time. Fold in gently treacle, sift ingredients, milk and ginger. Add ginger ale, brandy and vanilla essence. Bake in loaf tin in a preheat 160 Celsius oven for 40 minutes. Gently brush over with golden syrup. Sprinkle over with almond flakes.
