Chocolate Raisin Brownies Recipe


1 cup sifted plain flour

1/4 cup cocoa powder

1/4 teaspoon baking powder

pinch of salt

150g butter or margarine

1/2 cup castor sugar

3 eggs

1/2 teaspoon vanilla essence

1/4 cup evaporated milk

1/2 cup raisins


2/3 cup icing sugar

1/4 cup cocoa powder

2 tablespoons softened butter or margarine

2 tablespoon hot water


  1. Grease and line a 18cm square pan. Preheat oven to 180 degrees Celsius.

  2. Sift together flour, cocoa, baking powder and salt.

  3. Cream butter and sugar until light and creamy. Add eggs one at a time, beating well after each addition. Beat in essence.

  4. Fold in flour alternately with milk. Blend in raisins and mix well.

  5. Spread mixture into prepared pan and bake for 35 minutes or until cake tester inserted at the centre comes out clean. Allow to cool before icing.

  6. Refrigerate covered at all times.

Chocolate Icing:

  1. Sift together icing sugar and cocoa powder.

  2. Blend in softened butter and hot water. Mix well to form a smooth paste.

  3. Spread over cold cake evenly.

  4. Leave to set before cutting.
