Fried Yam Cake Recipe

Ingredients:

1/2 cup rice flour

1/2 tsp salt

dash of pepper

1 tsp light soy sauce

water to mix

1 yam (150g) peel and grate coarsely

1/2 cup dried shrimps (soaked, drain and pound finely)

1 tsp chopped Chinese celery and spring onions

1 red chili (seeded and cut into fine pieces)

oil for deep frying

Method:

Mix all the ingredients together and add sufficient water to mix to a fairly stiff consistency. Heat a pan of oil, then drop spoonfuls of the mixture into the oil and fry till golden brown. Drain on kitchen paper. Alternatively, shape the mixture into rolls 3 to 4 inches long (with floured hands), drop into the oil and fry till golden brown. Drain on kitchen paper. cut into slices and arrange on a serving plate, on a bed of lettuce leaves if desired.
