Lemon Loaf Cake Recipe


Ingredients A:

180 g castor sugar

4 eggs

grated rind of 1/2 lemon

1 teaspoon of lemon essence

Ingredients B:

130 g corn flour

130 g plain flour

 a pinch of salt

250 g butter (melt and cool slightly)

100 g raisins


Warm ingredients A in a stove for 5 minutes. Remove from stove and whisk till cool. Sift ingredients B together. Fold in melted butter, ingredients A and raisins. Pour batter into a greased loaf tin. Bake in preheated oven at 190 degrees Celsius for 40 minutes.
