1 teaspoon baking powder
280g plain flour
120g icing sugar
120g mixed fruit and raisins
24 small floral cups (greased)
Sift baking powder and plain flour
Beat butter and icing sugar till fluffy.
Separate egg yolks and egg whites for
later use. Beat egg whites and sugar till stiff peaks form. Pour in
egg yolks and beat till creamy yellow.
Pour in butter mixture and mix well by
hand. Pour in baking powder and plain flour and mix well to form
Place mixed fruit and raisins into small
floral cups. Pour in batter. Bake at 180 degrees Celsius for 15
minutes. Remove and cool.
