Savory Sweet Potato Cakes Recipe

Ingredients: Serves 6 to 8

400g sweet potato

3/4 cup flour

salt to taste

oil for frying

For The Filling:

3/4 grated coconut

30g dried shrimps

2 stalks lemon grass

2 red chilies

3 cloves garlic

2 shallots

1/2 tsp turmeric powder

salt to taste


Grind dried shrimps, lemon grass, red chilies, garlic and shallots together. Peel the sweet potatoes and cut into small cubes. Boil with salt until cooked. Then remove and mash. Mix the mashed potatoes with flour and knead until soft. Divide into equal portions. Start preparing the filling by mixing all the ingredients together and fry in 3 tbsp of oil until it becomes dry. Take a portion of the sweet potato mixture and flatten slightly. Put a small amount of the fillings in the centre and seal. Heat oil in pan and fry the cakes until golden.
