 Shrimp Topped Muffin Recipe



200g plain flour

1 tsp salt

2 .5 tsp baking powder

50g sugar

2 eggs

50g butter (melted)

120 milk



100g shrimp meat

30g cheddar cheese

1/3 cup sour cream/milk

30g finely chopped celery



Sieve flour, salt and baking powder. Mix together. Add in sugar and mix all the ingredients together. Stir together the eggs, milk and melted butter in another bowl. In the centre of the dry ingredients, make a well and pour in all the liquid contents. Stir mixture until it is moistened (lumpy). Fill mixture onto greased patty tins about 2.3 full. Combined all ingredients for topping. Add 1 tbsp of shrimp topping on each tin. Garnish with chopped spring onion and parsley. Bake at a preheated oven at 180 Celsius for 30 minutes. Serve hot.
