Sweet Glutinous Rice Cakes Recipe

Ingredients: Serves 6 to 8

600g glutinous rice flour

3/4 grated coconut

3.5 cups water

salt to taste

oil for frying

For Coating:

3 cups sugar

1.5 cup water

Method:

Mix the flour, coconut and salt together. Add water. Mix until it becomes dough consistency. Form into diamond shapes. Heat oil in pan. Fry the diamond shape cakes until golden. Remove and drain. For the coating, put water and sugar in a pan and bring to boil until the mixture thickens. Put in the cakes. Stir until the sugar crystallizes and coats the cakes evenly. Remove and serve.
