Lotus Root Syrup Recipe

Ingredients:

3 sections lotus root

120g rock sugar

3 tbsp honey

Method:

Wash and remove dirt from lotus roots. Then peel. Put in pot and pour in enough amount of water to cover the lotus roots. Wait until it boils and then cook over low heat for 1 hour or until it becomes soft.  Drain and leave to cool before cutting into slices. Cook rock sugar with 1 cup of water until 3/4  portion of water is left. Mix in with honey. Pour over lotus root slices and serve.
