Pineapple With Toasted Coconut Recipe


1 medium size pineapple

4 tbsp soft brown sugar

1/2 tsp chili paste

5 tbsp toasted desiccated coconut


Skin the pineapple and cut into 1 inch slices. Remove the hard core and cut the flesh into cubes. Mix 3 tbsp water, sugar and chili paste together. Pour the mixture over the pineapple cubes and leave to stand for 1 hour. Roll the cubes of pineapple in the toasted coconut and serve immediately.
