Red Beans Rice Pudding Recipe


3/4 small red beans

1/2 cup cracked rice

3.5 tbsp rice flour

5 tbsp sugar

3 cups water


Rinse the beans in cold water several times. Drain. Also rinse the rice until water is clear. Drain. Bring 3 cups of water to the boil. Put in the beans and cook over moderate heat foe 40 minutes. Add the rice and continue cooking until a mash is obtained. Remove from heat and rub the mixture through a fine strainer. Sift the rice flour over the mixture and add the sugar. Stir well. Bring the mixture back to boil, stirring until stiff. Transfer the mixture to several moulds or small cups. Leave it to cool and then chill for 2 hours. Turn the pudding out onto small serving plates decorated with fresh fruits and serve.
