Water Chestnuts In Iced Coconut Milk Recipe

Ingredients:

280g water chestnuts - diced

120g tapioca flour (sifted)

Red coloring

2 cups water

1 liter coconut milk mix with 1/2 tsp salt

320g Thai coconut sugar

150ml water

3 screw pine leaf (pandan leaf)

Ice cubes or Shaved ice

Slices of jackfruit (nangka) -optional

 

Method:

Boil coconut sugar with screw pine leaf (knotted) in 150ml water to make sugar syrup. Leave to cool. Bring water to a boil. Mix diced water chestnuts in a few drops of red coloring and toss with tapioca flour. Drop water chestnuts into the boiling water. Stir well and cook until the pieces float up. Dish up and soak in ice water. Then drain well. Mix the coconut milk with cooled sugar syrup. Place the water chestnuts in the mixture. Add shaved ice and jackfruit.
