Aroma Stewed Lamb Recipe

Ingredients:

900g shoulder lamb, boned

2 tbsp flour

3 tbsp cooking oil

salt and pepper to taste

750ml water

5 cloves of garlic (chopped)

6 small onions (chopped)

1 piece ginger (sliced)

1 big onion (chopped)

380g potatoes cut into 1 in cubes

380g carrots cut into 1 in pieces

sugar to taste

red chilies, spring onions and parsley for garnishing

Method:

Cut the lamb into 1 in cubes. Drain well. Marinate with salt and pepper. Heat cooking oil in a pan and fry the garlic, small onions and ginger until slightly brown. Sprinkle flour, salt and pepper over the browned meat. Turn the meat frequently to make sure ingredients are evenly coated. Fry until flour turns brown. Transfer the meat to a saucepan. Add water. Cover and bring to boil. Reduce the heat and simmer for 45 minutes. Then add the potatoes, carrots and the big onions. Add salt, sugar and pepper to taste. Simmer for another 30 minutes or until meat is tender and vegetables are cooked. Add water if too dry. Garnish and serve
