Madras Stick Curry Recipe


500g lean mutton cut into cubes

1/2 cup ginger, thickly sliced

1/2 cup small onions, peeled and left whole

2 tablespoons chopped onion

2 cloves garlic, chopped

2 fresh red chilies, cut lengthwise

1 tablespoon curry powder

60g ghee


  1. Pack cubed mutton, ginger slices and onions alternately on skewers. Keep aside.

  2. Heat ghee in pan and fry the chopped onion, garlic and chilies till golden.

  3. Add curry powder and a little water and mix well then continue cooking for a few more minutes.

  4. Pack the skewered meat in the gravy, cover and simmer over low heat till meat is tender. Add salt to taste.
