Soy Sauce Braised Chicken Recipe


1.5kg whole chicken

2 big onions

1 clove garlic

100g spring onions

80g soy sauce

40g dark (thick) soy sauce

1 stick cinnamon

1 tbsp star anise

1 tbsp cumin seeds

1 tbsp peppercorn

3 cardamom

20g sugar

5cm ginger

1 tbsp sesame oil

2 liters chicken stock

100g corn flour

2 tbsp cooking oil


  1. Mix all the ingredients, except the chicken and corn flour into a cooking pot and bring it to boil.

  2. Lower chicken into the mixture and heat over slow fire for 20 minutes.

  3. Remove the chicken from the mixture and place it on a serving dish.

  4. Pour in corn flour to thicken stock mixture.

  5. Simmer mixture for 2 minutes and pour it over chicken dish. Garnish with coriander leaves and serve.
