Pineapple Rice Recipe


1 pineapple

5 tbsp corn oil

3 cups cooked rice

1/2 finely diced ham

1 tbsp chopped garlic

1/4 cup raisins

1/4 cup roasted cashew nuts

1 tbsp chicken stock

3 tsp curry powder

1 tsp sugar

salt to taste

1/2 tsp ground white pepper


Cut off one side of the pineapple lengthwise (1/4 part) to expose the inside. Carefully remove the inside fruit and cut into small dice. Keep the outside of the pineapple. Heat oil in pan. Put in the ham and garlic and stir fry. Then add 1/2 cup of the diced pineapple and all the other ingredients. Mix well. Spoon into the empty pineapple and cover the pineapple. Baked in a pre heated 140 degrees Celsius oven for 30 minutes.
