 Thai Thick Fresh Rice Noodles Recipe

Ingredients: Serves 4

500g thick fresh rice noodles

8 medium sized prawns (cleaned and shell))

60g brown sugar

90 ml chili sauce

1 tbsp soy sauce

65ml fish sauce

1 tbsp tomato sauce

1.5 tbsp oil

2 eggs, beaten lightly

1 tbsp water

520g minced pork

1 onion, sliced

2 cloves garlic, minced

60g peanuts, roasted and chopped coarsely

150g bean sprouts

2 tbsp fresh coriander leaves

 

Method:

Place the noodles in bowl, cover with hot water and stand for 30 second. Gently separate noodles. Drain well. Heat the pan and fry the eggs. Cut the omelets into thin strips. Heat the pan with oil and stir-fry the pork, onion and garlic until the pork is cooked. Remove the mixture from the pan. Heat the remaining oil, add the prawns and stir-fry until the prawns changed color. Add the noodle, pork mixture, sauce mixture and remaining ingredients. Stir-fry and mix well. Serve hot.
