Chili Shrimps In Yam Basket Recipe


1 lb medium size shrimps (remove shell)

3 tbsp of cooking oil

2 tbsp ground onions

2 tsp of ground chilies

1.5 chopped garlic or chopped ginger

2 tbsp tomato sauce

1.5 tsp chili sauce

1 tsp tamarind mixed with 1/2 pint of water (strain well)

1 tbsp corn flour

1/2 lettuce (cut into thin strips)

Ingredients For Making Basket:

1/2 lb yam (peeled and cut into thin strips)

salt to taste

1 tbsp corn flour and salt

1 lb cooking oil for deep frying


Peel the yams and cut them into thin strips. Season with corn flour and salt. Spread 5 tbsp of yam strips on to a bigger sieve. Using a smaller sieve press the yam strips together. Fry in deep oil  for 5 to 10 minutes to form a nest. 2 or 3 nests can be made from 1 lb of yam. Place the yam basket on an oval dish. Encircle with thin strips of lettuce. Heat cooing oil in pan. Put in ground onions, chopped garlic and fry for about 2 minutes. Add in ground chilies and fry the shrimps together with garlic, ginger and onions. Mix in tamarind water, sweet chili sauce, tomato sauce, sugar and fry for 3 minutes. Thicken gravy with corn flour and simmer for 2 to 3 minutes. Put chili shrimps in the yam basket. Serve while hot.
