Clams With Basil And Chili Recipe


1/3 cup of cooking oil

700g fresh clams in their shells (washed and cleaned well)

2 tbsp chopped garlic

5 fresh chilies sliced lengthwise

2.5 tbsp red chili paste

2 tsp light soy sauce

1/2 cup chicken stock

1 cup sweet basil leaves


Heat oil in pan until hot. Put in clams and garlic. Cook until clams open slightly (about 3 minutes). Add fresh chilies, chili paste and soy sauce. Mix well and pour in the chicken stock. Bring to a boil and continue cooking for another 2 minutes. Stir in the basil leaves and serve.
