Shell the shrimps but keep the tail.
Remove the black veins. Marinate with salt, egg white and corn flour
for 30 minutes. To prepare batter mix all the ingredients except the
oil. Mix until smooth and free of lumps and then add in the oil. Heat
up oil for deep frying. Dip shrimps in batter and deep fry until
golden brown. Dish out and drain. To prepare sauce, leave only about
1/2 tbsp of oil in pan and sauté garlic till fragrant. Pour in mixed
